Stunning flavours and cheap ingredients make this a winner!
Used a heavy pot on the stove top instead of a dutch oven. Made it with peas instead of celery and about twice the volume of onions, garlic, carrots, and peas to make it chunkier. Could easily add other veg, but that's what we had to hand or in the freezer. Also used 1.5 Tbsp dried coriander leaves in place of the fresh cilantro. I pre-booked the lentils (used a different variety that need a longer cooking time) and only used about 2/3 of the cooked lentil volume (otherwise it would have been far too thick). Not a problem, though, there are lots of yummy dishes I can use the cooked lentils in!
⚠️ Warning! Even with only 1/2 tsp cayenne it was borderline too spicy for my kids, so recommend replacing cayenne pepper with smoked paprika if you want it mild. Adding a side of full fat plain yoghurt to the plate helps cut the spiciness, too.
Definitely one to add to the monthly rotation.
