I don't have an oven, so what I had done was cook the chicken, then I layered spoonfuls of cottage cheese (you heard me) on each piece of chicken in the pan, then dumped a lot of chopped spinach on top of that. DON'T TOUCH IT, put the lid on until the spinach is "melted" and it all came together beautifully. Season the spinach before you add it. Garlic powder, salt, pepper, and always always a little sugar cause spinach can get kinda bitter. I had glazed carrots and mashed potatoes with it and I'm in a coma now.
