Followed recipe. Initially the pork mixture was very bland. Added 2 tbsp tomato paste, 1 tsp Italian seasoning and more salt and pepper. Added some red pepper flakes for some pop. Got a little overboard with them, so I added some a tbsp apple cider vinegar and a pinch of sugar to cut down on the "hot".
Also substituted mozzarella cheese for the Monterey.
Turned out pretty good. Made more pork filling than I needed since I only did three so I froze the rest
