Stringy chicken means that it was not quite clear cooked. Add another hour or two next time. And check the freshness of your seasonings. If they are over a year old, don't throw them out but double the amount.

I cant see how adding another hour or two will not make the chicken stringy, its the process of cooking it slowly over time that seems to do it ,, ill provably try this recipe in a normal pan maybe rather than slow cooking it xx thanks for your feedback though it can be helpful at times so I can progress on my cooking skills xxx

I don’t know how much experience you have in slow cooking things, but, trust me, slow cooked stringy chicken is not done. It might be safe to eat, but it isn't "done". It needs a few more hours. Try it. You'll see. Or don't. And you'll never know.

I learned that trick, when I lost a Dutch oven cooking competition, from some Dutch oven cooks that were "old hands" at it. I found that it works in the crockpot at home as well. It can make all the difference as to who wins.

I will try cooking the chicken more and maybe on high next time , last time I cooked it on low,, ive also read stringy chicken can be a result of dried out chicken or the cut of chicken so I used breast which can result into stringiness so I may use a roast chicken next time ?

Honestly, the cut, or part, of the chicken can make a very tiny difference, breast is better for "shredded chicken" because it does have a tendency to be stringy if slightly under cooked, but thighs and legs don't seem to have that tendency as much but I have seen it in them also when waay under cooked. Cooking on high until the time is half up then on low to finish is a very good idea!

Dried out chicken is the result of too low of a cooking temperature at the beginning.
