Super good- made adjustments to the recipe just for flavor and the size of the dish i had to cook it all in (the cookie sheet to catch potential overflow)
-coated the chicken in salt, mayo and curry powder before cooking- seared it on both sides then added onion to the same pan to cook
-just used my rice cooker and water to make the rice
-shredded 12oz of sharp cheddar and 12oz of Munster cheese ((used almost all of it))
- added frozen corn for texture n taste
-2 cups of cooked rice before going into the oven then another cup carefully mixed in after I took it out
Very much a comfort meal, and im looking forward to having leftovers !!
