Instructions

For Chicken

Step 1
Season both sides of chicken breast with salt and pepper.
Step 2
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Place chicken breasts in and sear both sides until golden brown and internal temperature reaches approx. 120 degrees Fahrenheit.

Cut chicken into inch by inch squares.

For Rice

Step 4
Wash rice thoroughly in cold water. Strain and set aside.
Step 5
Bring 2 cups of chicken broth to a boil. Add rice bring pot back to boil and remove from heat.

For Casserole

Step 6
Preheat oven to 350 degrees F (175 degrees C).

In a 9x13 inch baking dish, mix the prepared rice, chicken, cream of chicken soup, butter, milk, broccoli, onion, and cheese.

Bake in the oven for 30 to 35 minutes, or until cheese is melted. Stir halfway through cooking to help cheese melt evenly. Top with cheese and replace in oven until melted. Let cool for 10 - 15 minutes and serve.

Wonderful. Didn't use both bags of cheese though as my family aren't the big cheesy type. Super creamy, very yummy, season everything how you prefer it, stir during baking. I used thicken thighs for this and it was very juicy and amazing. If you're struggling with the instructions (even though they're simple) this is how I did everything so everything was prepared at relatively the same time. LONG POST! ↓ Meal prep: Find all your ingredients and pair them with your measuring tools even if it has to be in groups around those cups/tbs (makes life easy and organized) Chop/Dice up your unions wash your rice (as instructed and set aside) Season your meat with every and anything you desire NOW Preheat your oven to 350°F PREEMPTIVELY or while you're searing your chicken to give it ample time to reach temp FIRST you warm your oil in your skillet and lay the chicken in on medium heat or high (might depend, careful or grease popping! Your oil is already warmed/hot and it will crackle and pop) Give that first side a few minutes , don't stress about checking it too often especially if it's a thicker piece Then fill your pot with the broth and bring it to a boil. This won't take long Flip your chicken and do the other side After a few more minutes your pot will begin to boil or be up to a good boil, then add your rice. This ESPECIALLY will not take very long Your chicken should be seared by now, feel free to take it out the skillet and cut it into cubes as directed. The chicken prep, arguably the most stressful part, is done! Your rice will have begun to reboil hopefully in the middle or near the end of your chicken cutting (possibly, if you're speedy) Remove from heat and you are absolutely ready to start adding everything to your dish. Edit: make sure the rice has become fluffy sorta. When adding to your dish, rice first, then all liquids go in + chicken (stir) before your cheese last. 5/5 very good!! It can be bland if you don't know how to season good and my instructions are just for those (like myself actually) who panic on what should be done in what order prep and cooking wise so you're not scrambling like "omg I should've prepped this in the beginning and now this is chaos". Enjoy! Def a go-to easy meal.
