Used 2 onions, 8 cloves of garlic, 2 bay leaves, 1tsp salt and 8 cups of water. Par boiled the pork belly first to remove scum. Added the pork back to brine broth, which was boiling for 5mins. Boil medium heat for around 40mins. Cool and slice
