This turned out great; I did not do the overnight rice soak, but that would probably be great. Didn't measure the veg too closely and probably used a little more than it called for, and did end up replacing coconut milk with some almond milk + vegan butter as I didn't want to open a can of coconut milk for 2 Tbsp. Flavorful, good way to get extra veggies in with your carb. We ate it with a red curry tofu and it was a great pairing.
