Super easy, super fresh, super delicious. Goes with anything, but also good as a light lunch on its own. Because it has no lettuce, you can keep it for a couple of days before it gets too mushy. Weirdly enough, I ate it for lunch with cold meatloaf and it was fantastic, so you don't have to limit your menu to Mediterranean foods. Sure, serve it up with some grilled branzino and it's heaven, but if it works with meatloaf, it works with anything.
