1 teaspoonred wine vinegar

½ teaspoondried oregano
or 1 teaspoon chopped fresh oregano

½ teaspoondried dill
or 1 teaspoon chopped fresh dill

freshly ground black pepper

3plum tomatoes
large, seeded, coarsely chopped

0.75cucumber
peeled, seeded, coarsely chopped

0.5red onion
peeled, chopped

1bell pepper
seeded, coarsely chopped

½ cuppitted black olives
preferably brine-cured, coarsely chopped

0.5 heaping cupcrumbled feta cheese
Instructions
Making The Dressing
Step 1
Whisk the olive oil, lemon juice, garlic, vinegar, oregano, and dill together until blended. Season to taste with salt and freshly ground black pepper.









Step 2
This can be prepared 3 hours ahead. Let stand at room temperature. Re-whisk before using.

Combining The Salad Recipes
Step 3
Combine the tomatoes, cucumber, onion, bell pepper, olives in a bowl. Toss with dressing. Sprinkle with cheese and serve.
