For the caramel bit, heat the oil then add sugar and shake the pan and wait for the sugar to dissolve. Once it’s dissolved, parts will begin to turn to caramel, so quickly add the onions to stop it crystallising, and mix. Then add ginger then garlic. Cut extra onion, ginger and garlic for stir fry veg side dish, but cut the onion bigger for the stir fry. Before adding salmon to the pan, make space by moving the onion out the way, then add the salmon skin side down and scoop the onions on top of the salmon fillets - if they’re at the bottom of the pan they’ll burn.
