I added an extra potato to this recipe. What I did was to mix together the broth, coconut milk, the spices,and heated those up in a pot and added the potatoes to that first and let that cook. My purpose was to use the potato as a thickening instead of the corn. After the potatoes had gotten to the soft stage, I removed some with the broth with some cooked potatoes and used my immersion blender to purée. I added this back to the pot with the rest of the broth and potatoes, and then added the corn and let that cook. While that was cooking, I sautéed the rest of the vegetables. I had also added a small onion in addition to the onion that was already listed in the ingredients. When I sautéed the onions first, I let them caramelize before I added the rest of the vegetables. When the vegetables had finished sautéing, I put them in the pot with the broth, the corn and the potatoes. I heated that through and served it. It was delicious.
