This turned out quite well! I think it could have used more instructions, so I'll include some details in my review. I used just egg and while you can't quantify it the way the recipe calls for, I added a thin layer of it to my large frying pan the 1st time around, and a bit more the 2nd so it would be more prominent. I also went ahead and warmed up the smoked tofu by including it with the just egg and spinach to cook (this does make it a bit clunkier to flip). For the unspecified spices, I added a sprinkle of oregano and Trader Joe's onion salt. It turned out very well! I would just say that because of the balsamic vinegar it felt more lunch/ brunch than breakfast. Overall, it's a hit and was way easier than I had anticipated!
