Instructions
Step 1
Start preparing your (vegan) egg following the instructions. Add baby spinach on top and then cover with the tortilla. Once the egg is fully cooked, flip it.
Step 2
Then add vegan feta, smoked tofu, tomatoes, balsamic glaze and spices. Optional: Roll it up and grill or eat it straight out of the pan. I also served it with a vegan yoghurt dip.
