First of all I had to substitute regular plain yogurt for the Greek yogurt. Make sure you get the roasted peppers as dry as you can. I cooked the chicken breasts in the instant pot and then leaving a small amount of the cooking liquid in the pot I shredded the chicken with a hand mixer (game changer). That and the more runny yogurt made the filling too moist so I set it in a mesh strainer for a few hours before using. Whew! Anyway I followed the rest of the recipe exactly and the result was very tasty. Well except for using baby kale from the garden instead of spinach. Husband and I and our guest all loved it. It was very easy to make and I will make again. It would be nice using diced leftover pork or canned tuna. I used too much chicken and didn't increase the other ingredients enough. I won't make that mistake next time and it'll be even better! I used oroweat low carb tortillas and it was very diabetic friendly!
