350F for 45 minutes in a ceramic baking this was definitely not long enough for the carrot, potatoes and even the onions since the recipe says you should put it under the chicken. I would try putting the chicken first in the pan then the veggies so they cook maybe at the same time. Try 400F for 45 minutes and hopefully that will help cook the vegetables. With all the marinade though, it's like it dropped out into the pan. The pan went from 1 cup of broth to 3 to make more of a stew than a dry dish. I don't know if it was just me. For me personally, I didn't like the honey's sweetness. You can taste the lemon and the honey the most in this dish
