It turned out perfect! Tried to multiply it to use 10 lbs of potatoes. Didn't purchase enough ranch mix so, added an eyeball-ed amount of garlic powder, salt, and homemade freeze-dried green onions (scallions). Didn't purchase enough buttermilk so, added regular milk. Used "good ol" Idaho russets. They weep a lot in baking so tripled the flour in the roux.
