I admit that I didn't use all of these ingredients because I didn't have them. What I did use was the seasoning as per recipe, which was fantastic.
I used one long, skinny aubergine and one large one, the garlic, and cauliflower. Roasted all of those. Didn't peel any of the vegetables, just put it all in a pot, mashed it so it was easier to blend, and then used a stick blender.
Used chicken stock, didn't use any dairy. It still came out very creamy. Admittedly, it looked pretty awful, but it tasted really good.
