Added taco seasoning, garlic, cumin, salt. It was bland otherwise, but opened up with a little spicing. Doubled the recipe the second time, used 28oz enchilada sauce, 2c chicken broth (accidentally, but it turned out fine) and 3c milk. One can of original rotel, and one can of mild just to give a slight kick. Top with avocado, sour cream, cilantro, and lime :)
