Very delicious. I ordered Inca's Food Aji Amarillo and Inca's Food Aji Panca online. Pat the chicken dry; don't wipe off the marinade. This, along with drizzling with olive oil, helps make the skin crispy. I made both Green Sauce and Huacaina Sauce plus yuca fries.
