Monique Lemoine simplified version
1. Preheat oven to 375F
2. Chop 11 oz cauliflower into bite size pieces. Place in 8x8 inch baking dish, add 1 tablespoon water, cover with plastic wrap and microwave for 4 minutes.
3. Meanwhile, whisk 5 eggs, 1/3 cup almond milk, 1 tsp. Garlic powder (or any of your favorite seasonings such as Italian, Herb de Provence) 2 tsp. Nutritional yeast, 1 tsp. Sea salt, 1/2 tsp. Pepper
4. Pour over cauliflower in the 8x8 pan, top with spinach, give it a stir to coat veggies.
5. Bake for 30 minutes.
6. Insert point of sharp knife; if it comes out with no runny mixture, it’s ready to eat!
