This was great. Made it with garlic noodles as a side but that ended up being a lot, (it does feel like the soup needs a little crunchy side dish - maybe air fry some potstickers or an eggroll). Used baby bellas, added frozen peas at the end. Tried this because I had a lot of large bok choy from the garden so I threw the stalks in to simmer for 5 min before adding the leaves and potstickers. Half batch made enough for two people. Didn't look like enough soup until I added the rest of the greens and dumplings, which filled it out quite a bit. Would be good with baby corns, sprouts, or water chestnuts too. Did furikake topping and used better than bouillon chicken base. Maybe try stirring in a scrambled egg next time, or adding chicken to poach in liquid. It really is as good as your potstickers though so make sure you get ones you really like.
