This was fine, but very mellow. We were low on fontina for leftovers so we tried mixing the remaining fontina with cheddar for one sandwich, and pepper jack for another. I think a jack cheese works the best. Also chopping the spinach would make it less stringy/clumpy. It was a nice enough sandwich, but maybe not worth the effort to make. Then again, we doubled the recipe and did end up with filling for leftovers, and so subsequent sandwiches were quick to make.
