Came out delicious (mild, but delicious)! Used 1 can diced tomatoes instead of whole. Used cashews AND some heavy cream I had already opened. Used chicken broth instead of plain water. Roasted chickpeas WAY longer than 20 mins total. Thought the kids would like it. Annie did not even try and Isla was noncommittal. Could definitely add two full cans of chickpeas (there was more sauce than chickpeas).
