Modified Ingredients:
Diced tomatoes (canned)
Diced bell pepper (fresh)
Chili flakes
3/4 cup uncooked rice
1 box beef broth
2 packets taco seasoning
Sour cream (topping)
Crushed corn chips (topping)
I added the ground beef, onions, and green peppers to my instant pot with salt, pepper, and oil. Sauteed until browned. Mixed in the taco seasoning, added the broth then everything else except rice and toppings.
I used the soup setting but reduced the total time to 20 minutes. I let it release naturally. I cooked the rice in a pot separately.
I added the rice and mixed. Once dished out, I added a few dollops of sour cream, sprinkled with grated marble cheese, and crushed corn chips like crackers.
