Soup was good and quick. I couldn't find nitrate-free Italian sausage so I used a local andouille. I think the Italian would have been better, but I added a little extra Italian seasoning and some paprika and the flavor was good. I used a barista oat milk in placed of the cream and spinach in place of kale. I also removed the meats after cooking and added back just before the cream and greens as others have suggested. Overall a tasty soup that I would make again if I can get the right sausage. Don't forget to top with parmesan!
