As a lot of comments say it does need a little longer than 15 minutes for the rice to cook, closer to 20, I also added an extra 1/4 cup of water half way through cooking for the rice which made it perfect.
I didn't have any peppers on hand so i used peas instead for veg content, and due to personal preferences used butter beans instead of kidney beans.
I love spice so this was quite mild for me but my partner who has a low spice tolerance said this is spicy to him.
This is a really filling meal and will become a go to for me when trying to stretch out a budget. Also, I'd say it would make a brilliant burrito filling
