Took several liberties. Cooked 4 strips of bacon and cut into bits. Cooked the chicken in the bacon grease. Did not clean out the pan. Added the butter, added 1/2 an onion, cooked for a couple mins. Then added garlic, then tomatoes. No one but me will eat spinach, so I left that out. I didn't have heavy cream so I used just under a 1/4 cup sour cream, and a bit over 1/4 cup of 1/2&1/2 with the parmesan. Once reduced, a added 3/4 of the bacon into the sauce, then chicken. Served over noodles. Used remaining bacon and some Parsley as garnish (then more parmesan). Big hit with the family.
