Delicious! Based on others' experiences, I made 2 cups of quinoa, chopped up 3 large sweet potatoes and 2 bell peppers, and added about 1/2 cup of feta cheese, which easily made this 6 servings.
We had it warm, and it was quite yummy!
Substitutions: We didn't have red pepper, so regular pepper did just fine. Cooked the potatoes and onions with 2 TB vegetable oil as I heard from a chef that it's better for roasting while olive oil is best for fresh foods like the dressing--this rule of thumb also eliminates that fishy smell when olive oil is cooked.
I would use yams next time for more color than sweet potatoes.
