umm, I *may* have had spoonfuls of the sauce alone...
the chicken was cooked under the broiler at High for about 6 minutes for the first side and about 8 or 10 minutes for the second side. I ended up using about 1.7 lb chicken. I also melted the coconut oil and brushed it over the skewers. When the cashews were put in the food processor, I made sure they were not just pulverized but creamy. If you like it spicier, add more Thai chili paste or even your spicy condiment of choice.
