Did marinade beef in Montreal seasoning but might not next time. Wouldn’t sweat it if I didn’t have it on hand. Amazed this called for no broth and would be interested in adding some. Came out really great and tasty even though I simmered it for much longer than recipe called (got caught up with work and forgot). Chopped the carrots rather than julienned, and threw in an extra can of beans. Did add the pasta water. Finished with a sprinkling of Parmesan and, with buttered crusty bread, was tasty, filling, and made leftovers. I am curious about doing this with a protein past but the pasta it calls for was great. V8 in a soup - who knew?
