We loved this! This will become one of our regulars! I did add more veggies- 1 whole zucchini and 2 sweet potatoes. And used 1.8 pounds chicken thighs. Added slightly more oil and spices. Great flavors! Made a quick white (Greek yogurt) sauce from a recipe called Food Cart-Style Chicken Salad with White Sauce by Skinny Taste. You can eat as is or we also ate over yellow rice. With the added veggies, we did use two roasting pans to spread things out.
