THIS was a SMASHING success! I multiplied it by 22-24. I replaced the corn with peas (allergy). I replaced the black beans with refried. I assumed Rotel is a kind of seasoned tomato sauce and so I used a mild spaghetti sauce. I used a homemade taco seasoning (from this app). I didn't have cooked chicken, let alone 12 cups of it! So I used 4 large, raw chicken breasts that I, roughly cubed into 1/2 inch pieces. Baked at 400 F for 20 minutes until bubbly in the middle then put the cheese on top and left them in the oven with the door shut and the oven off for another 5 minutes to melt the cheese.
Used it as dip for homemade tortillas. Everyone had seconds, some had thirds. Some ate it plain! No leftovers!
