Stunningly easy. The hardest part was wishing I had four hands and sealing the parchment paper. All issues were finagled just fine. I had frozen Mahi Mahi that I thawed the night before. I cooked quinoa the night before too. I had left over cherry tomatoes and zucchini that I cooked down in olive oil to put on top of the quinoa. The packets were beautifully sexy as they came out of the oven. You do want the juice from the packets! I didn’t have olives, I had lemon juice, and ground thyme. I’m ready to make this again! Yum!
