I made this tonight. I halved (more or less) the recipe. I swapped homemade chicken stock (made with roasted bones) for the veg broth. I substituted spinach for kale and used less then the recipe called for. I used canned diced tomatoes with Chiles and less then half the recipe called for. I used my potato ricer to smash half the roasted cauliflower and sweet potato (which I didn't peel). I added a splash of half & half as it was cooling. I really dislike sweet potatoes and don't care much for cauliflower. It was DELICIOUS! I will definitely make it again.
