Unless you really love parsley, I'm not sure why you would make this over a more traditional basil and pine nut pesto. The pesto was fine but not amazing, and the rest of the recipe is just boiled vegetables and "cooked" chicken (I went for sauteed... can't even imagine how bland this would be if you also boiled your chicken).
I see others have recommended adding lemon juice/zest or additional seasoning, and maybe that would help, but with so many better options out there, I don't plan on revisiting this one to try out tweaks.
