I subbed some frozen sofritto mix for the onions and carrots, tinned white kidney beans for the lentils, ready made pasta sauce for the tinned tomatoes and frozen spinach and the end of a bag of frozen mixed veg for the greens. Oh and I was out of veg stock so used chicken. I didn't need to blend it either as the pasta sauce was already blended. It was really nice and got 10/10 from most of the family apart from one who requested more garlic next time!
