Used 300g spinach rather than 500g and struggled to fit in stock pan, suggest food processor/grater for veggies and chorizo next time and roughly chop rather than grate eggs (or poach on top of soup) 2 really enjoyed, 1 ok, 1 a little rich (plus didn’t like cooked spinach). Also used cubed pancetta in place of ham as didn’t have, not sure needed on top of chorizo (omitting pancetta might make less rich). Used chicken stock cube. Try again with liquid from jarred chickpeas.
