There's room for improvement. It was simple to cook and it tasted fairly good. A chef I know said people eat with their eyes and I get that especially after this meals presentation. If someone would have offered me some I would have kindly declined. It needs some color for sure. I'm thinking of a red and orange bell pepper added during the last few minutes of cooking. I'd also cut the onions in large layers instead of fine chop so they stand out. Also fresh cut tomatoes into wedges and cucumber(seeds removed) cut lengthwise 3" x 1/4". I'd cut back on the garam masala to 1-1/2 Tblsp max and add more peanut butter.
