These were delicious. They are a bit of a commitment though since you have to prep and roast the sweet potatoes. I simmered the beans to make them creamy, added a layer of soyrizo, and mashed up the avocado a bit + added lime.
I used two cans of beans, 2 large + 1 small sweet potato, 6 eggs, and 2/3 can of enchilada sauce to make 6 big burritos
