This turned out fantastic! I used King Arthur's baking 1:1 gluten free flour that already has xanthan gum in it. I only had 1 egg so I just used that and 3 mashed bananas. I used a hand mixer to get everything smooth, then sprinkled in some walnut pieces and mixed with a spoon. I greased a rectangular glass dish (bread loaf size) with butter and baked 350F for 50 min. I let it cool and cut it into 7 slices. Very easy!
