Lovely, easy recipe! I made it vegan, so baking block (marg) instead of butter. I also wanted to change up the flavourings a little, so I didn't use freeze dried strawberries and I replaced the strawb jam with Apricot jam. I replaced the vanilla extract in the biscuit dough with 1 tsp lemon extract and 1 tsp coconut extract. Really happy with how they turned out, and there weren't any difficult steps! They make a lovely gift too, and travel well.
