I'm giving it a thumbs up because it sounds delicious, but I could never eat it. Severe aubergine allergy here. It used to be that I could eat it cooked, but I got hives if I touched it raw, but allergies can become more serious over time. Now, I can't even eat it cooked without my throat swelling and hives. I can't even dine at restaurants that have it on the menu because cross contamination has sent me to the hospital before. Restaurants are great about washing their meat cutting boards, but their vegetable ones, not so much. In most dishes, I can substitute courgettes or yellow squash, but in this one, the creaminess of the cooked aubergine carries the dish, so substitutions aren't possible. I will have to envy those of you who can eat it from afar. Please enjoy it and pity those who can't partake in such an iconic vegetarian protein.
