Instructions
Step 1
Slice the aubergine in half, season with olive oil, salt + pepper.
Step 2
Chop the top off a garlic bulb, season with salt, pepper + oil, then roast with the aubergine at 200 for 40 minutes, or until tender + caramelised. You could also do this on the grill or over an open flame.
Step 3
Leave to cool, then scoop out the flesh & squeeze out the garlic. In a blender or by hand, mix the aubergine, garlic, tahini, yoghurt, juice of 1/2 a lemon, salt + pepper.
Step 4
Season to taste with more lemon if necessary + add some extra virgin olive oil if you like.
Step 5
To serve, place into a bowl, top with pommegrante seeds, molasses, fresh mint + a drizzle more oil. Enjoy!
