Even though, except for me, 17 of the 18 people on our homestead are Mexican American, this doesn't mean we don't like other cuisines.
I made this for 24 servings yesterday for lunch and even my 6 year old granddaughter wanted more!
I did this the traditional way and started on this at 4 AM so that all the flavors would come out and blend together by slow cooking.
My wife and my oldest daughter helped out in our commercial kitchen that we have for my wife's business, and it was ready at noon. I did add extra beef because after all, we're in Texas.
We got everyone served, and before I could get more than a couple of spoonfuls, my youngest grandbaby was saying "More please" and holding out her empty bowl. My wife laughed and got up and got her another bowl.
We also made some egg rolls to have on the side, and by the time we started cleaning up at 1 PM, there was NO Soup or egg rolls left. LOL
So it's grandbabies approved and y'all should enjoy it!
