I didn't have a muffin pan so I ended up making a blueberry cake muffin lol. It turned out way better then expected. I did substitute maple syrup with honey and used regular vinegar so as not to buy more ingredients I don't need in my regular life. The cake was super filling and even though I made 6 servings, it ended up lasting close to 10. Anyways, really happy with how it turned out.
