Easy-to-follow recipe with instructions. Frying the buttered/breaded eggplant slices was the hardest part… but oh so satisfying! This photo was before I added the tomato sauce. Will save that until it’s ready to pop into the preheated oven for fear it will make the crispy eggplant slices soggy if I add it too soon…
