This was a really good recipe, loved cashew sauce but some tweaks need to be made:
- the sauce tasted like olive oil, I would add less then 1/4 cup
- 1.5 cups is too many lentils, I would only use 1 cup
- add 2 tablespoons of tomato paste at least
- I seasoned the quinoa with salt, garlic powder, and paprika for extra flavor and would do that again
