This turned out kind of meh, but it was probably my fault as much as the recipe's. Needed 1 large, 2 medium bananas to make 3 cups. I also didn't quite trust my new spelt flour, so I used 1 cup spelt and 1.5 cups GF flour with about a tsp of xanthan gum. I also thought it seemed too thick, so I added a splash of water. The good: good flavor, chocolate chips were a welcome addition. The bad: this was easy too sense and moist, probably because of the weird flours, the extra water, and baking in a slightly small pan. I ended up adding about half an hour to the bake time with a foil tent on top after about 55 minutes, and it was still really dense and seeming undercooked on the bottom. Next time: just follow the goddamn recipe and see how that turns out.
