Bribery Banana Bread

From Ski Snacks We originally designed this super easy, one-bowl banana bread for bribing the good folks in ski shops to wax our skis and repair our bases. But it also works for bribing your ski partners to meet you at the trailhead extra early or ski another lap when it’s just too good to quit. Sometimes a sweet banana-filled nudge is all you need to squeeze a little more fun out of a day in the mountains. A ski-bum-approved one-bowl recipe means you could almost make this one with your eyes closed. Usually, we make two loaves—one for bribing, and one for ourselves. Extra slices freeze well for prepping snacks ahead of time, too. Original version: used 1/2 cup butter instead of 1/4 cup butter and 1/4 cup yogurt; used 1.5 cups spelt flour and 1 cup all-purpose flour instead of all spelt flour

Instructions

Step 1
Preheat the oven to 350 degrees F and butter or grease an 8-by-4-inch loaf pan.
Step 2
In a medium bowl, mash the bananas and stir in the melted butter.
Step 3
Add the brown sugar, ¼ cup of the white sugar, egg, yogurt, vanilla, baking soda, and salt. Stir well.
Step 4
Pour the mixture into the loaf pan and sprinkle with the remaining 2 teaspoons white sugar.
Step 5
Bake for 50 to 55 minutes, or until a toothpick comes out clean. Let cool for at least 15 minutes before removing from the pan.
